Despite that fiery note that ends the flavor, the finish is relatively light, going down as both earthy and salty. On the palate, the whiskey starts out as a syrupy, candied fruit cake, but ends with spicy oak. The scent is quite woody, but more of fragrant cedar and pine than of oak, and with a brushing of sea spray. On the nose, the scotch is something like standing in a seaside stand of evergreen trees. Isle of Jura 16 Year Old scotch has a lovely mid-gold color, and is bottled at 40% alcohol. The 16 Year Old figures into this story because the distillery keeps a bottle of the stuff lodged in the cave said to be the home of that spirits-loving spirit, just in case. He held firm for almost 30 years, despite the irate response of Jura’s residents, until he was visited by the Dickens’ style ghost of an old lady, which scared him into lifting the ban. One of those old legends is that the old lord of the island banned independent distilling there. As such, it supposedly embodies the character of the islanders and the quirks of living there, such as the old legends, dramatic landscape and the sometimes harsh weather. The finish is long and zesty, with intense citrus and crème brûlee. ![]() The palate is rich with a creamy delivery, sweet vanilla custard and toasted malt explode on the palate, followed by dense chocolate and dried fruit flavours. The nose brings notes of mango, and pineapple, with a little dried fruit and toasted oak notes. The whisky itself is delicious, and surprisingly tropical for a distillery known for its oily coastal island style. This whisky is named after the Carnas an Staca Standing Stones found on the Isle of Jura, which were constructed 3000 years ago by Diurachs, the ancient inhabitants of the Island. Gonzalez Byass is one of Jerez’s largest and most esteemed bodegas, well known for producing fantastic quality sherries (they also helped to introduce electric lighting and sophisticated plumbing in Spain). ![]() This whisky has been aged in ex-bourbon barrels for 27 years, before being finished in Gonzalez Byass Oloroso butts for the last three years. This whisky was first unveiled at the 2012 Whisky Show, and ever since, drinkers have been eagerly anticipating its general release.
